Sous Chef – Special Diets and Ordering
Camp Cobbossee for Boys seeks a capable and experienced Assistant Chef to join our Dining Hall and Kitchen leadership team.
Cobbossee is a Maine sleepaway summer camp near Monmouth, Maine. It is a wonderful place! Our kitchen staff is integrated into our vibrant community. Many kitchen staff return year-to-year.
This position will support the Head Chef and Assistant Chef by doing most of the ordering for our food service, as well as cooking for the members of our community that eat a special diet. This includes but is not limited to allergies deriving from eggs, gluten, dairy, and shellfish. This also includes campers and staff who are vegetarian and/or gluten free, as well as pork-free.
ORDERING
The ordering portion of this position consists of ordering truck deliveries of food and supplies online and via the phone, in concert with the menu and plan developed by the Head Chef and Camp Director. We use PFG, H and H, and Sysco. The interface is straightforward and intuitional.
SPECIAL DIETS
The cooking for special diets consists of making food at breakfast, lunch, and dinner for about 20-30 people a day. This means cooking for DIFFERENT special diets at the same time, and therefore choosing delicious options that dovetail with our regular meals. It is absolutely critical that the food be prepared properly and with sharp attention to detail given the fact that dangerous allergies are at play.
LEADERSHIP
This position also generally contributes to the leadership of the Dining Hall and helps supervise a staff of about 20 kitchen personnel. Our Head Chef will take care of most of these duties, but this position will contribute in an assisting fashion.
QUALIFICATIONS
The successful candidate will have a strong and proven background in cooking for people with varying dietary restrictions. Experience with gluten-free, vegetarian, and dairy-free is a must. Also a must is experience cooking for shellfish, dairy, egg, and nut allergies.
Furthermore, the successful candidate must be able to order food for a daily seating of 400 persons. This means being highly organized, detail oriented. It also means being proficient in online ordering, which means being proficient with a computer.
Ordering also means being able to be flexible when orders are shorted or replacements are sent.
